On the FIBS server there are not only human players, but also a number of computer players, often referred to as bots. With current technology, most bots play at a very high level, close to or maybe even surpassing the best players in the world.
To play a game or match with these bots, you can just invite them as you would with human players. If you want to know more about a certain bot, try tell [botname] help (or kibitz help if you're already playing with the bot). If the bot doesn't seem to respond, you can usually try kibitz move.
Bots come and go, here is a list of some of FIBS' bots, their ratings tend to be in the 1900-2000 range:
